- 2 cups cooked quinoa
- 1 jalapeño, seeded and minced
- 1/2 cup red onion, finely chopped
- 1 fresh mango, peeled and diced
- 2 tomatoes, diced
- 2 avocado, cubed
- 1 can organic black beans
- 1 tablespoons extra-virgin olive oil
- Salt to taste
- 1 lime
- 1/2 cup cilantro
Directions
- In a large serving bowl stir together cilantro, jalapeño, avocado, tomato, onion, mango, oil, salt and lime juice until mixed well.
- Stir in quinoa
- Can be served warm or cold
