No-Bake Energy Bites

Ingredients:

5 tablespoons cacao nibs
1 cup dates
1/2 cup peanut butter
1 tablespoon coconut oil
1/4 cup peanuts
1/2 cup granola
1/4 cup oats


Directions:

1. Mix all ingredients in food processor. Pulse just until mixture comes together to form a ball.

2. Remove mixture from food processor, divide and use hands to roll into small balls.

3. Roll each ball in cacao nibs and rolled oats and place finished balls into paper liners.
Store in the refrigerator.

Apricot Bars

Ingredients
1 cup dried apricots
1/2 cup dates, pitted
1/2 cup almonds
1/4 cup coconut



Directions
Place all the ingredients in a food processor and process until well combined. Line a baking tray with parchment paper and press the mixture into a large, flat rectangle about half an inch thick. Chill in the freezer for at least 30 minutes before cutting into bars. store bars in the refrigerator for up to 1 week or in an airtight container in the freezer for up to 1 month.

Mango Gazpacho


Ingredients 

  • 2 cups diced fresh mangos 
  • 2 cups freshly squeezed orange juice
  • 1 cup chopped cucumber, peeled and seeded
  • 1 small red bell pepper, seeded and chopped
  • 2 garlic cloves, minced
  • 1 small jalapeño, seeded and minced
  • 3 Tablespoons fresh lime juice
  • 2 Tablespoons chopped fresh cilantro (basil or mint would be good as well)
  • 1 to 2 Tablespoons olive oil
  • 1 teaspoon onion powder
  • Himalayan sea salt and freshly ground black pepper
  • Red onion, chopped for garnish
  • Avocado, sliced for garnish


Directions
  • Reserve a small amount of the mango, cucumber, red pepper and cilantro for garnish.
  • Process the remaining ingredients in a blender until smooth and creamy. Taste and adjust with salt and pepper as needed.
  • Refrigerate until ready to serve.
  • Pour into bowls and garnish.

Chia and Goji Breakfast Bowl



Ingredients
  • 1 cup coconut milk (or any nut milk of choice)
  • 3 tablespoons chia seeds
  • 1 tablespoon raw walnuts
  • 1 tablespoon honey
  • 1 teaspoon goji berries
  • 1/3 cup mixed berries
Directions
  • Mix all the ingredients except the mixed berries in a glass jar with a lid and let it sit. Stir again in 15 minutes, cover and refrigerate overnight.
  • Serve with fresh berries.
