An Antioxidant Rich Pomegranate Salad for Heart Health

Antioxidants deliver many health benefits namely those associated with keeping our hearts healthy.

This salad is a delicious blend of fresh greens, pomegranate seeds, goat cheese, and walnuts, all covered in a simple balsamic glaze dressing.


     Mixed leafy greens, 1 cup

     Kale chopped, ½ cup

     Baby Spinach, ½ cup

     Pomegranate, ½ seeded

     Toasted walnuts, ¼  cup

     Goat cheese, crumbles to taste

     Black pepper


Balsamic vinaigrette

     Red wine vinegar ¼  cup

     Extra virgin olive oil ¼ cup



Wash all leafy greens, kale, and baby spinach. Next, in a bowl mix together the red wine vinegar and EVOO . Wisk vinaigrette and add black pepper to taste. Toss greens in vinaigrette and place in large salad bowl. Add toppings and enjoy.


Additional toppings may include fresh lemon juice, sesame seeds, pine nuts, beets, and arugula
