An Antioxidant Rich Pomegranate Salad for Heart Health
Ingredients:
Mixed leafy greens, 1 cup
Kale chopped, ½ cup
Baby Spinach, ½ cup
Pomegranate, ½ seeded
Toasted walnuts, ¼ cup
Goat cheese, crumbles to taste
Black pepper
Balsamic vinaigrette
Red wine vinegar ¼ cup
Extra virgin olive oil ¼ cup
Directions:
Wash all leafy greens, kale, and baby spinach.
Next, in a bowl mix together the red wine vinegar and EVOO . Wisk vinaigrette
and add black pepper to taste. Toss greens in vinaigrette and place in large
salad bowl. Add toppings and enjoy.
Additional toppings may include fresh
lemon juice, sesame seeds, pine nuts, beets, and arugula
